This might involve a breakfast of poached farm eggs, hoe cakes and roasted greens, followed by trout fishing or paddle-boarding in a mountain stream, a barre or yoga class, winding down with a reiki session in the Wellhouse, a spa and health centre surrounded by calming views. With a tranquillity room, vitality bar, and personal trainers on staff, guests can create a truly personalised fitness and nutrition programme. Sustainability is at the heart of the farm’s ethos. The gardeners preserve the traditional practices of the Cherokee and early Appalachians, who cultivated these foothills and foraged in the fields, forests and streams. Almost everything on the seasonal menu is reared, grown and harvested locally. This natural bounty is transformed into phenomenal dishes served at the Dogwood restaurant and The Barn, where celebrity chefs often take over the kitchen.
